Homemade Guacamole and Ryvita Crisps

This snack idea is not the most elaborate or gourmet; but, it is healthier than a packet of crisps and takes just a few more minutes to prepare than grabbing a packet of crisps from the cupboard. My step-mum calls me a ‘grazer’ because I love to eat whilst I am working. Because I consume more food whilst I work, I try to provide healthy and nutritious snacks so I do not feel so guilty or bloated. Therefore, I try to make snacks which I can pick at such as nuts, seeds, dried fruit, popcorn or if I fancy something a little more filling, I make this homemade guac and crispbread snack!

This is honestly the most simple guacamole you will ever make. All you need is:

  • 1 avocado
  • 5 cherry tomatoes
  • Salt and pepper to season

Method:

  • Cut the avocado in half, remove the stone and use a spoon to scoop out the flesh.
  • Mash the avocado using the back of a fork
  • Season the avocado
  • Half the cherry tomatoes and add to the avocado
  • Mix the tomatoes and avocado together

At the time I made this, I had some Ryvita seeded crispbreads which my partner’s parents gave to us. Normally,  would not have these. Instead, I would use normal crackers or rice-cakes- anything that is crispy in texture would be suitable!

This is a quick, easy and healthier snack option. This is not only suitable as a snack, it can be used in a dinner spread (just make sure you make a larger portion), for breakfast or even to accompany your lunch. If I were to have this for lunch, I would have some soup with it.
