Deliciously Ella’s ‘Overnight Chia Oats with Coconut Yogurt’

As you can probably tell, I am on a Deliciously Ella hype at the moment! I have been really enjoying trying her recipes and experiencing the world of plant-based foods!

Yesterday I tried the notorious ‘Chia Puddings’for the first time which have become a healthy eating obsession by most bloggers, healthy eating cooks and social media influences.

It is not a recipe from her ‘Deliciously Ella: Everyday’ book but is on her website which is like an online recipe book. Super handy if you do not want to purchase the actual book!

The recipe was extremely easy and quick to prep! I knocked it up in about 5 minutes and then placed it in the fridge to set overnight. I swapped the coconut yogurt for a low fat Greek natural yogurt which I had in the fridge at the time. Surprisingly, the mix of the oats, almond milk, Chia seeds and yogurt resulted in a texture like a creamy mousse. With the added topping, this is what adds a bit of crunch, texture and flavour to the fairly bland mix. In the morning, I added 2 teaspoons of honey for a bit of sweetness, fresh strawberries, defrosted frozen raspberries and blueberries and then added a dollop of almond butter on the top! Naturally, I had to make it in a glass jar to appeal to my aesthetic. It wasn’t the easiest to eat out of, but it looked great and was definitely a change up from my ordinary white cereal bowls!

I am definitely going to repeat this recipe as little ingredients were needed and breakfast is basically waiting for you in the morning; all you need to do is add your desired topping and it is done! Perfect if you want extra time in bed or do not have time for breakfast in the morning! Also, if you put it in an airtight jar, you can always take it to work/ university/ school with you (as long as it is not out of the fridge for too long). It is a sweet and filling recipe which you can have for breakfast to set you up for the day or great for a dessert or a snack to satisfy those sweet cravings!
